This recipe was given to me by my friends polish mother and I felt privileged because she said: It's usually passed only from mother to daughter. My friends and family love the dish, and I hope you will too.
Don't be put off by the ingredients, such as Sauerkraut, as many people have said that they did not care for the ingredients individually, but love them melded together.
Servings 8-12 people
Ingredients
1 small to medium sized fresh cabbage
1 large white Onion, Julienne
1 bag of Baby Carrots
5 regular sized cans of sliced potatoes, well drained
1-1 lb bag of Sauerkraut
3-4 delicious or eating apples, cored and sliced, skin left on
8-12 Pork Chops, thinner cut
2.5 lbs Kielbasa or smoked Sausage, cut into 3" pieces.
add 2 lbs of hot dogs, uncut for the children, if needed.
1 can of beer of choice. 12oz
1/4 cup Brown Sugar
Garlic Powder
Worcestershire Sauce
Paprika
Salt and Pepper
Nutmeg
Preparation:
Start with a large turkey roasting pan with lid.
Lightly grease the pan with Olive or Vegetable Oil, then place the outer leaves of the cabbage and place in the bottom of the pan to cover the bottom. (This will help the dish as your pan won't burn)
Julienne the rest of the cabbage and spread over bottom leaves.
Next layer. add the bag of drained off Sauerkraut over the cabbage.
Sprinkle the brown sugar over the sauerkraut and add Kielbasa or smoked Sausage, (hotdogs if using them)
Add the julienne Onions over that and add worcestershire, paprika, garlic powder and the can of beer.
Add Sliced Potatoes and baby carrots. Salt and Pepper, garlic, and Paprika.
add Pork Chops and season with S&P and garlic
Add the sliced apples evenly over the top.
Dust the apples with nutmeg. (fresh grated, if possible)
If you think there is not enough liquid, please add an extra cup of water to the pan
Cover with with lid.
* If the pan is too full, cover with Aluminum Foil and place on a sheet pan to keep fluids running out into the oven.
Place in oven at 350 degrees for 1 hour. Take pan out and check if it is done. It can go back in to oven for another 30 minutes if necessary.
The recipe can be used for a party of 8-12, or multiple meals for a family of 4.
