As I was growing up. My brother Robert and I had our favorite dinner which was my Mother's Biscuits and Sausage Gravy. Every time I saw her get our her flour sifter and 4" deep chicken frying skillet and anticipated her Biscuits and Gravy was on the menu for the evening! She would start with 2-1# Bob Evans Breakfast Sausage which she browned and crumbled. then sifted 1/3 cup of flour over the sausage. On a medium heat stir with wooden spoon flour into the meat and leftover fat and cook and stir for 2 minutes. If you do not have enough fat in the bottom of the pan, add some extra butter to pan (3-4 Tbsp)
At this point, add 3 cups of 3.25% whole milk (we always had non homogenized milk with a head of cream, and make it richer and tastier!)
Stir with a whisk constantly as it thickens.
Black Pepper - use a generous amount 1 Tbsp. and 1/2 Tbsp of salt and 1/4 tsp of ground nutmeg. Simmer on stove-top for 20 minutes.
While the pan is simmering, start making biscuits! Preheat oven to 450 degrees
My mother used Bisquick for her flour and followed the recipes on the box, or of she was in a hurry, she would use Pillsbury Grand Biscuits.
4 1/2 Cups Bisquick
1 1/3 Cup Whole Milk
Blend milk into Bisquick and mix until combined well.
Use a large spoon or ice cream scoop to portion biscuits on baking sheet pan with parchment or wax paper.
Place sheet pan with biscuits into oven for 8-10 minutes. Once finished let cool for 2-3 minutes.
Serve 2 split biscuits on the plate and spoon gravy over the top. Serve with 2 eggs, as a side.
This is a dish that I still often long for as I think of the wonderful food my mother prepared for us all.
